It's a "cheese" made from cooking down whey/milk/cream until it's thickened. The lactose browns and starts to taste like caramel.

Sometimes I'll fry a piece of mozzarella in a pan and the liquid that comes out gets thickened and browned, and it starts to taste sweet. It's pretty tasty. I've never had this gjetost/brunost cheese but I'd like to try it at some point.

This. That's pretty much on par with any quality cheese. My rule of thumb here in the us is that good cheese costs about $15/lb or more. That's quite close (500g is over a pound).

I actually looked for gjetost at the grocery store on Friday because of that thread and was sad to not find it. Had it once at a cheese shop in a small town in Wisconsin where I lived where most of the people were of Norwegian heritage. That cheese shop was awesome, I'd like to go back to the town for a day and see how things have changed in the past 14 years.

I would not spend that for it. It's not that it's not worth it, it's just a pricey way to try something that is simply a so-so thing.

Head to your mexican hispanic local market or like a good Wal-mart, and buy Coronado (or another brand) of "goat milk cajeta" instead. Goat milk caramel is luscious sweet like dulce de leche, and has that gloriously weird funkiness from the goat sourced milk it's made from. Heavenly complex flavors of that sweet and savory, far more addictive than salted caramel, for example. Enjoy on crepes, baked goods like just a drizzle over a slice of spice cake from the oven, or pour over ice cream. I serve on buttered toast sometimes, or like in a croissant. Mexicans also thicken goat milk cajeta further into milky crude funky little caramel candies, if you do find a good mexican market that has a lot of imported things ask for cajeta lollipops or other candies with it too.
