Shortening is also best for chicken fried steak.

By the way, the local grocery store has chicken leg quarters on sale for 39 cents per pound this week. I've got to remember to go to the store tomorrow and buy about 20 pounds of chicken.

I'm undecided whether to cook it all at once or just enough for a week at a time. In either case, whatever I don't need that day will be in the freezer.
