So I bought those dry kaffir leaves. Damn they smell nice.
As I haven't tried them before, any suggestions would be welcome.
I'm thinking soups, some asian food.idk.

Chucking a few into some fried rice works well and lifts the flavour. Or any curry that uses coconut milk. Otherwise, Thai green curry all the way dude.

They go in pretty much anything you make in a pot, including plain rice.
That goes for bayleaf as well, in my opinion.

>simmer for an hour + with some kaffir lime leaf in it
>if you have an immersion blender maybe smooth it some more in the pot
>brown some meat
>add to curry sauce, cook until meat is done
>season with fish sauce & salt & pepper

For the paste, i normally do ginger + garlic + chilli + quite a lot of fresh turmeric + lemongrass
Then for the meat it's normally chicken thighs or shrimp
then coriander or thai basil on top

If you really like it, i suggest you get a tree. They're easy to look after, smell great, fresh leaves are better, and it might even give you kaffir limes, the zest of which is the proper ingredient for green curry paste, not the leaves

Fry some raw peanuts with those leaves, palm sugar, salt, lemongrass, and dried chillies. Best and most dangerously addictive snack ever.
