The chicken is heated to the point where all the water in it evaporates and the remnants become literal charcoal.
Charcoal is the lightweight black carbon and ash residue hydrocarbon produced by removing water and other volatile constituents from animal and vegetation substances.

the blackening is caused by a combination of the spices (of which black pepper is typically prominent) and the maillard reaction that occurs when the meat is exposed to high direct heat. 'Blackened' really just means an aggressive, almost burnt sear. So yes, a degree of carbon - formed by the maillard reaction - does form on the meat lending it a signature color and flavour. You have to be careful to not actually thoroughly burn the meat though as carbon tastes like ass.
