Here in Mexico City there's a shit of ton of delicious things and an equal number of disgusting street foods like the stuff that gets posted on webms.

Where do you live? I recommend trying any of the dozens of different moles (sort of like Mexican curry) if you have access to them. The introductory mole tends to be mole poblano - insist on eating with pork. All mole should be eaten with pork, fuck nasty boiled chicken.

There's the authentic quesadillas that resemble oversized empanadas. I usually eat them stuffed with squash blossom, mushrooms, or the corn mushroom. They're great.

I'd say access to authentic cheeses and dried/fresh peppers (pasilla, ancho, guagillo, chilaca etc), and herbs such as epazote, are important to experience authentic Mexican foods.

tex-mex is good, but OG mexican food has some incredibly clever combinations of sweet and savory.
if you've never had, i recommend trying tacos al pastor: chunks of fried meat in a sauce with citrus fruit, usually mandarins or pineapple. fucking delicious
