Not that guy, but it's basically julienned carrots and cucumbers marinaded in sugar and rice vinegar stuffed into rice pasta and rolled with ther fillings - basil/cilantro/watercress/vermicelli rice noodles/pork/shrimp sometimes beansprouts too

Everywhere I get them they are basically similar ingredients but the quality does vary greatly I think a Viet makes it better than say a Haitian chef ;)

Make a nice spicy peanut sauce or a fish chili sauce or something

I tend to put a little bit of fish sauce, chilis, and ricewine vinegar into the vermicelli, then dip with a nice peanut sauce, but the sky is the limit. Just try to layer it in a way where the sauces stay in the middle and dont touch the rice paper wrappers, otherwise they get soggy if you dont eat em immediately
