Food is the only good thing about working out on the rigs. There will be a cook and the kitchen will be fully stocked with whatever you want. Bourdain discussed it in at least two of his shows as well. There is a common misconception that sushi must be made with "fresh fish". Of course the fish must be of high quality and safe in order to consume raw, which people tend to associate with "fresh and never frozen". The reality is that high-end megabuck sushi is deliberately aged in order to improve the taste and texture of the meat. The process is not the same but the general idea is a lot like how beef is "hung" before being eaten. Anyway, there are at least two documentaries on YT that I can recall. One was an episode of Japanology, the other was an unrelated NHK documentary. Should be easy enough to find.

yes a lot of seafood is flash frozen on the boat. I believe flash freezing prevents larger ice crystals from forming and doesn't affect texture like a consumer freezer. The fish is frozen to preserve freshness and to get the temperature low enough to kill parasites so it could be eaten raw eventually, as in sashimi. It's frozen right on the boat and, thus, the boat is not obligated to return to shore right away to dump the catches.

Depends on the rig. Floating rigs are built in a shipyard then towed into place by tugboats. Other ships called "anchor handling tugs" come out and deploy cables & anchors to keep the rig in place. These can be moved from well to well and are used in water too deep to build up from the ocean floor.

Rigs that sit on the ocean floor are also built in shipyards. Some are towed into place and then lower "legs" on the seabed. That's called a "jack up rig". Others are built in pieces on shore, towed out on barges, then assembled with huge ass cranes like Thialf or Siapem 7000. The base structure is built by divers, etc, working from a construction ship. The main structure called the "topsides" is carried out on a barge then lifted on top of the platform by the aforementioned crane vessels.

I think he said it’s generally pretty good but he’ll often work night shift meaning his breakfast is during dinner time. This means he’ll eat roast beef dinners first thing and cornflakes for dinner. But seriously I am currently getting my cpa and looking at the way people spend makes me so angry when I am trying so hard to survive. I really think have my self hatred stems from not being able to comfortably provide for my family and always having to skim by at end of the month. Depends on the country. Here in Canada the oil riggers eat like kings. There isn't much fun or comfort to be found on a rig, so the companies take care of their workers by providing great food. The cooks who work there are really good, they make far more money than they would working in some restaurant in a city but they are expected to produce top-quality results.
