Not a fan of skins. Has to be properly crisped, and to do that you need the whole fillet at the same temp or the fatter mid section causes the middle skin to not crisp. Lots of restaurants fuck that up. So usually, I dont eat the skin.

You don't eat the scales. You de-scale the fish and eat the skin without any scales. Any restaurant you've been to has done this to remove the scales from the skin; you don't eat them, they don't soften up. Has no one here actually prepared fresh fish for themselves?

Some restaurants remove the skin for aesthetic reasons.

It's perfectly fine to eat and more nutritious than any other part of the fish, pound for pound. If you go to a good seafood place that is no frills, they'll leave it on.
