The sauce is Tzatziki sauce. Basically, cucumber and sour cream I think.

The ideal gyro has a fried peta bread, nice helping of meat, a good dollop of sauce smeared over the meat, sprinkled lettuce and two tomato halves on top. For a patrician experience, chicken can be mixed with the meat.

Tzatziki is really simple to make, but wouldn't keep in a store setting because cucumbers weep liquid the longer it sits. Run a cucumber across a grater, squeeze out liquid a handful at a time, add to bowl, then grate a raw garlic clove, combine with greek full fat yogurt, fold to combine. Squeeze of lemon juice. I like to add some lemon zest to up the flavor. Salt, pepper to taste.

Regionally, some people add dill or parsley, or mint.

Yeah they have a similar concept but there's a few differences. Here in Sydney there's definitely more kebab joints but more gyro places have started opening up in the last few years.
First thing you'll usually notice at a gyro place is the option to order pork which you'd never see at a kebab place for obvious reasons. Also, the wrap is different. Gyro use pita bread and kebab use leb bread. And when it comes to the sauce gyro have tzatziki while kebab have chilli, garlic, bbq, etc.
I prefer gyro as the meat is usually nicer and the option to get pork is always welcomed.

Oh by the way authentic Gyro from Greece (not from Chicago) is usually chicken, sometimes beef, and NEVER that disgusting ground and reconstituted sodium-laden meat. If you get a good chicken gyro it will be very juicy. I never really had chicken that was juicy before I had one of those. They're pretty great and don't feel so heavy and unhealthy even in spite of the juiciness.
