Need breakfast recommendations. Been feeling like shit for awhile and I think it's probably from skipping breakfast/eating too late. Preferably something that can be done under 20 mins.

I make a sausage and egg McMuffin clone, can also be done without the sausage.

Start cooking the sausage patties and eggs first, in a a little olive oil with an egg ring. Then start cooking the English muffins. I then assemble everthing and leave for about 5 minutes, which lets the eggs and sausage cool down and also the cheese melt.

Precook a batch of spiced red lentils ahead of time (cumin, cinnamon, garlic, and onion, cooked in chicken stock), then cook some scrambled egg in the morning and combine lentils, egg, some cheese, and whatever the fuck else in a breakfast burrito (tortilla needed).

Another recipe I got bored of but enjoyed for a while is scrambled eggs. I cook 2-4 eggs on a medium-low heat, stirring constantly. If you do it right, it first thickens, then suddenly gets a lot thinner. After getting thinner, it gradually thickens. When the temperature is right, it will be steaming a bit. You can then just keep cooking til it gets to the point you like them. I don't know the science for why it gets thinner at first, but it's very noticeable once you've seen it once.

I serve with salt, freshly ground pepper and parsley.

You surely need some meat. Here's an easy way to make god tier fried chicken:
>cut it in small (about 1-1.5 cm thick) pieces
>soak in soy sauce for a while
>you can leave it over night, it stays just fine in a fridge for a few days, just cover the bowl with food wrapper
>add some potato starch (corn starch should probably work as well)
>mix it well with your hand so all the chicken pieces are covered in this soy-starch cement
>fry it on high heat in whatever oil or butter you like
Starch creates very thin delicious crisp that seals all the taste inside.
You can replace soy sauce with any marinade you like.
Should take less than 10 minutes if you already have the chicken prepared.
Add some spices and side dish (spaghet, rice, salad, whatever).
Enjoy.

Typically, huevos rancheros get beans, tortilla, pan fries, chile (or chili if you're texan) cheese and eggs on top.
Obviously you customize, many omit potatoes or chile (no chile makes it super boring imho), add some kind of meat, sour cream, avocado, extra side tortilla (corn on bottom, flour on side is popular). If your potatoes, beans and chile are pre- prepared it's quick and easy to assemble.

OP, if you're not married, I recommend fast food. McDonald's McMuffin with sausage and cheese, or a Sonic supersonic burrito. Both are good. If you're in the SW, go to a taqueria and get some tacos. Chorizo and jalapeno salsa will wake you up.

Bring a pot of water to the boil and reduce to a medium heat. Crack egg into ramekin dish or small cup. Get a spoon and stir the water to get it swirling and gently pour the egg in. Its all in the swirling. It keeps the egg together. Make sure the egg is cold. Put it in the freezer for a few mins before. Let it cook for about 4 mins for a cooked but still runny egg.

If you want to have a perfect poached egg every time, all you need to do is put your eggs in a fine, wire-mesh strainer and swirl them gently. This process gets rid of the "loose" whites that fuck up a poached egg, and only retains the "tight" whites that have a beautiful ovoid shape.
