noodles: Hakubaku Organic Ramen (recommended if you can't get your hands on fresh ramen)
broth: pork bones, dried shitake, ginger, garlic, onions, kombu, leek
tare: white miso, sugar, shoyu, mirin
toppings: chashu boiled in shoyu, mirin, garlic, ginger, leek, onion
then used the stock from this to marinate the softboiled eggs for 2 days.
bean sprouts and cabbage are more parboiled than boiled.
topped all with chopped fresh leek.

Roasted chicken (Rubbed with butter, salt and pepper, sitting in dry vermouth, water, onions and herbs).
While it was resting, I've made a gravy out of the chicken juice and drippings.
I had removed the onions and browned them in a bit of butter to make them better, since they couldn't brown in the liquid they cooked in.

9/10 would eat again but with an additional vegg.
Served with potato purée.

Nope, I let it sit in about a cm of liquid and put it in the convection oven at 220°C.
It ended up with a very crispy skin, but the bottom (and the chicken oysters) remained moist. Steam from the liquid helped keep the meat tender and juicy (even the breasts).

I made baked salmon with coconut curry sauce, garam masala roasted turnips, and collard greens with bacon and shallot.
Kind of dissonant as far as an entree-side-side assembled meal, but the fatty tasty greens made a good palate cleanser for the fruity spicy curry and all of it was really tasty. It was my first time cooking collards.

The first pasta was really simple, sliced chicken and fried quickly before removing from pan, then added onions till cooked through then garlic and chilli. Deglazed pan with a touch of red wine, tossed in pasta and some pasta water, mixed in parmesan, basil and diced sundried tomatoes, toss till sauce "comes together" when cheese melts, basil lightly wilted. Top with shaved patmesan and somered chilli flakes/pepper.

Lunch noodles i chopped up a bunch of random leftover vegetablss i had. Think it wqs broccoli, capsicums, onion, some garlic and chilli. Marinated chicken in some mirin and soy sauce (dark and light) and some brown sugar and sesame oil.

Fried garlic and chilli, tossed in chicken then vegetables, then tossed in noodles when everythibg looks just done. Cook really hot in the wok, only took about 5 mins once everything was prepped. Hope this is enough to go by, kinda drunk right now. Good luck anon. Pic relatef is some shanghai souo noodles from last week
