A small quarter turn of the valve is all you need. Season your grates. Clean regularly and keep it clean of grease. Those steel brushes for cleaning grates can be a hazard, when that scraper side will usually do the job. Keep the hood closed as often as you can, don't nurse and flip your food too often. Indirect heat is your friend, utilize it to your advantage, whether it's food prone to cooking quickly and drying out or smoking meat.

when grilling keep the top open, people think you need to close the lid on these things to cook anything, but really that just traps the heat and tends to overcook most things.

I use pic related to season them. I don't think there's any need to marinate them but it wouldn't hurt. Then you just skewer and grill over medium high heat for about 3 minutes per side
