Start with dried beans soaked overnight if you're doing crock pot all day, no need to use canned in this instance. Then, simmer your dried beans in simple water. Consider a variety of beans to add some flavors like black, pinto, cranberry, great northern, black eyed peas. In cast iron, char and roast a couple veggies like onion quarters, a couple fresh chili peppers garlic cloves, and tomatoes if you have them (otherwise use whole tomatoes in the can).
Meanwhile soak some deseeded dried chili peppers such as pasilla, california, california, etc, process in blender with roasted veggies. and add to pot.
Add seasonings of your choice, from cumin to oregano to coriander to epazote. A nice addition is hominy for some corn flavor. Secret ingredients can include chocolate, coffee, pinch of brown sugar, sprinkle of corn meal, pureed nuts like pumpkin, or carrots in there.
Toppings vary, but a spoonful of fresh salsa is nice, as is cheese, sour cream, fresh cilantro, or fried rings of chile peppers. I always make regular beef chili, but I like chile con carne with rice, with southern style (not sweet) cornbread, and most especially with a fresh beer quick bread fresh from the oven.

If the primary spice profile develops from a variety of chili peppers, both dried and fresh, it most certainly is chili. However, it isn't chili de carnist.

Fun fact: The original TX chili was simply boiled pinto beans mashed with salt and various chilis, formed into bricks, dried and rehydrated into a soup on the trail. A small % of inbred trail hands had to have meat so they slaughtered a helpless, crippled steer and threw some in their bowls, but most rough and tumble trail hands were vegans.

Since /ck/ is actually a fun board I'll give you a serious answer.

Serious tomato flavor always makes chili taste better, I usually throw in a can of tomato paste, two if you're making a big batch.

I like spice in my chili so I usually throw in some hot peppers. You can just chop some pepper up and throw it in, it'll taste fine but turn mushy and the skin will peel off. If you get New Mexico red chili (the dry saggy red ones) you can peel the skins off and blend them, they make a sauce with some water that goes really well. (You'll want to wear gloves with hot ones.) This is a bit of work but worth it I promise.

A little vinegar usually sharpens up a good chili, I use rice vinegar but any mild one will do the trick.

Also, if you want to keep it vegan try some dried fruit or something. They slow cook well and add some nice texture to a pile of beans.

Consider warm spices like allspice, cinnamon, nutmeg and cloves. I haven't used them in chili but I just made a batch of (wet) jerk seasoning and the spices really add something.

Another good vegan dish is rice and beans, but for sufficient protein, double or triple the amount of beans. I'm not vegan but I eat a lot of this.
