I work in a French place and I always thought they used milk in their omelettes or ouefs brouilles(scrambled eggs). Really, they just up the yolk to white ratio. Technique plays a huge part too.

Using butter is infinitely better than milk. This is what I did when I made scrambled eggs this morning.

>Put 1-2 tbsp butter in small pan
>add chopped jalapenos and onion
>cook for a few minutes
> add beaten eggs
>constantly stir while they cook
>add salt and fresh cracked black pepper

They were fluffy, creamy, buttery, and delicious.

It depends on how well you like your eggs cooked. I like them to not be runny but not totally dry on the outside either so I don't think milk would benefit cooking them like that too much. For people who like them completely cooked, the little bit of extra moisture probably makes them better.

I don't add milk but I like to add a spoon of cream fresh to my scrambled eggs wen they are 2/3 done to make them extra creamy.
