It's really low quality food. People mostly go there to try out whatever their new mad science experiment for the month is. It doesn't even call itself tex-mex, it's just a brain trust to find out what the most ludicrous thing you can make is using Americanized taco ingredients that people will still pay money to eat. Definitely a fun joint, but you're not missing too much.

I remember a decade ago I was on a school trip to Bremen and found this hidden gem of a food place serving "mexican" fast food. I tried a burrito and had to go for seconds and thirds because I haven't had anything as good as that. So I figure Taco Bell would give me that kind of experience again

There are eateries in America devoted specifically to burritos that are way better than the ones you can get at taco bell. The American burrito really is a mainstay of fast food, and you should try one again if you get the chance. A good california burrito is GOAT comfort food.
