Try Dampfnudeln ("steamed noodles/dumplings"). You make plain sweet yeast dough, let it rise a bit, then form it into tangerine sized dumplings, let those rise a second time, then place them in a deep skillet with a tight sealing lid. Add milk, sugar, salt, butter, then close the lid and steam the dough dumplings until the milk is gone, then continue to fry them in the "dry" pan at low heat until the sugar and butter have caramelized. A typical Bavarian dish, and like so many of them it also uses very simmple and cheap ingredients but is very demanding in regards to meticulous execution and technique. Lift the lid at the wrong time or have an unfavourably shaped lid that drops water onto the dumplings and your dumplings are fucked.

Eat with vanilla sauce/custard, sprinkled with a powdered sugar and poppyseed mix and butter or as savoury dumplings with cucumber salad with a vinaigrette sauce.

Rostbrätchen/Rostbrätel
>get good quality pork neck
>cut into thick slices (literally use your thumb as reference)
>pound them until tender
>mix German style Schwarzbier, sliced onion, pepper, salt and mustard (not that yellow American stuff, use Dijon if you can't find something from central Germany)
>you want the mix somewhat thick, not entirely liquid
>drop pork cuts into mix, rub it in
>let it rest in the fridge over night
>grill (preferably over charcoal)
>don't throw onions from the mix away, put them in one of these grilling pans and serve them as a side

this is great and well loved in hesse, served with plenty of hard cider.
another specialty is Obatzda which is a bavarian cheese spread. Just going to copypaste wikipedia here, it's not something that's popular in my region so I can't offer a recipe.

It is prepared by mixing two thirds aged soft cheese, usually Camembert (Romadur or similar cheeses may be used as well), and one third butter.

Sweet or hot paprika powder, salt, pepper are the traditional seasonings as well as a small amount of beer. An optional amount of onions, garlic, horseradish, cloves, and ground caraway seeds may be used and some cream or cream cheese as well

Best german dessert incoming. Apart from Rote Grütze have a look at Klöße or Knödel. They can be made out of different ingredients like Grieß (fine and rough), potato, or bread. They are usually some sort of side dish but can also used as a dessert. For example as potato Klöße filled with apricots.

Also Zwiebelkuchen, Zwiebelsuppe, and Flammkuchen are great and easy to make.
