Your paring knife probably had a huge ass burr from the factory that is now gone and has stopped sawing food apart. You can now put on an actual edge, one that cuts stuff and doesnt saw it apart.

That is probably the issue, anon. Pearing knives should never be used on apples.
However, appling knives are GOAT for all fruits. Don’t know why but I think it’s the type of steel used.
