Mapo tofu is one of the most based dish but not a lot of people know about it

It tastes like almost nothing on its own. Texturally, "cottony" tofu is pretty nice and has a pleasing firm texture and a certain sponginess while "silken" tofu is more smooth. Give it a try.

I eat tofu about every day. I use soft tofu to partner with yogurt to up the protein content, it's just a mild mashy thing with a yogurt like texture. Medium and firm are great in soup, just toss 'em in miso soup or just about any clear broth. You can dredge it in flour and panfry. You can fry it, slice it, and add that to soup, which is delicious.
I haven't made mapo tofu just yet but I'll hunt down the ingredients, I think it needed chili oil or something which I didn't have.

One dish I've never seen online is boiled taro, dipped in soy sauce. You get taro (the small kind, not the large kind that can have a purple tinge) and boil it. Then peel it and eat it while dipping in soy sauce.

Another great dish that isn't very popular is 白切鸡. This is made by boiling a chicken very gently, then chopping into pieces (chopping through the bone). Then serve with a dipping sauce made of ginger, scallions, salt, oil and water, all blended together. I think it's not popular because when you chop through the bones the liquid is red so it looks undercooked (and maybe is).

Every casual who's watched food network occasionally knows about mapo tofu. Everyone on /ck/ knows about it, and the majority of the board has never cooked or paid for a meal at a restaurant in their lives. The only reason more people haven't had it is that Szechuan restaurants are pretty rare in lots of places.
