what do i do with sichuan peppers?

i bought a jar of them in Chengdu and love the feeling when you eat them but I don't know any recipes to use them with

They're citrusy, so seafood dishes are a given. Although to be honest I've only ever used them in vegetable stir-fries and added them to ramen.

If you have them whole in a dish, it's bad. They have a horrible hard texture. A few are ok but if you put too many in and keep accidentally consuming them, it's not nice. What you want to do is fry them in oil, then take them out and discard. You'll be left with a numb oil which is nice for a lot of Chinese dishes. You can also use them to marinate meat and fish.
