I was wondering if keeping hard cheeses that don't need refrigeration in a mason jar is a bad idea. Also if anyone has any suggestions of hard cheeses that keep well un-refrigerated that would be great.

pretty much all hard cheeses keep for a while without refrigeration - people ate them long before refrigeration. Just cover it with cheesecloth, that's what it's for.

This. They'll sweat a bit above 70°f and dry out more quickly so you can just grate them if they do. Keeping them bottled in a jar isn't good, it's better if they are able to breathe a bit.
