Say I've got a bunch of leftover roast chicken, but I'm craving a southern fried chicken sandwich. How would you go about getting the crust without just overcooking the chicken? Coat one side of the bread slices and fry that? Make some sort of pancake of pure crust?

I'm surprised this isn't already a thing really, like scraps from the chip shop. I'm thinking I'll dice up some of the skin that still has fat on it, mix it into a thin batter with the same seasonings as you'd use on chicken, and try frying that.

Perhaps marinate it first then bread it and fry it. I'm not a cook though.

ensure the chicken is very cold before frying, and use a thick batter
