I work at a steakhouse where our cheapest cut (a new york strip (or kansas city strip specifically)) is $41. We serve our steaks on super hot (300 degree) plates because this keeps it hot for you as you eat our massive piece of meat that would otherwise go cold. The steaks do rest however, we rest them between 6 and 8 minutes, then flash it again to make sure it's hot enough to eat.

Personally I think this strategy we use is a little unnecessary but it's got a little charm and it's not just cheap or mexican restaurants that serve things on hot plates. You guys simply don't know much cuisine.
