there are two different ways to mitigate bitterness in food and drinks.

as salt can nearly completely neutralize the bitterness, this isn't the route you normally want to go down. if you have doubts, put a small amount of salt in your coffee.
sweetness, on the other hand, does more to complement the bitterness, which is what makes dipas and imperial ipas less bitter, due to having a higher sugar content. belgian beers are usually characterized by the sweet and sour flavor profiles, and combining that with a normal ipa can give you a less bitter product, yet without the high abv.

yep, you have to brew it in the abbey to get the trapist authenticity certificate
Bernardus is one of the few that isn't brewed by monks, it was brewed on the license of some monks as "Westvleteren 12" (the 2nd highest rated beer on Ratebeer), but now the monks brew it in their abbey and the brewery they used to have a deal with still brews the same beers under their own name
