Good foods can be fast, and they can be easy, but they can't be both. If you want good food that's fast, you've got to cultivate your cooking skills. For example, a traditional French omelette is actually extremely quick, and easy really once you have the skills, but it's got a bit of a learning curve in terms of being able to execute it

Roast chicken. Easy as fuck, looks great, tastes great. Make some mashed potatoes and some kind of vegetable side and you're gold. Bake some yeast dinner rolls and you achieve God status.

Whole chicken (don't cheap out), lightly stuff the cavity with maybe celery and shallots, truss the bird, rub with a light coat of olive oil, sprinkle with kosher salt ("like a light snowfall"), 400F until the breast meat is at 155 and the thighs are at 425F or whatever desiccated temperature the FDA suggests...

Risotto is super easy and delicious. Buy a little jar of that chicken broth powder (I think Knorr makes it), rice, some mushrooms, zucchini, onion, garlic, and parmesan. Recipe is super easy and there are thousands online, all you really need is a tall pot.

1 lb frozen crawfish
1 stick butter
3 stalks celery, diced
1 white onion, diced
3 green onion, chopped (optional)
1 bell pepper, diced
2 cloves garlic, finely chopped (can sub garlic powder for casual meals)

3 bay leaves
1/4c flour
1/4c vegetable oil
tony chachere's cajun seasoning
rice

make a light roux with the flour and oil
add butter, garlic, bay leaves, and cook a few minutes

simmer a bit
season with tony's and black pepper to taste

Why not buy a packet mix and make it look homemade (it mostly would be anyway)? You add chicken, cream, tomato sauce, and onion with the packet mix. Real curry is more involved since it requires roasting different ingredients and such to bring out flavors.

It really depends heavily on what equipment you have and how much skill you have. Even just a good set of sharp knives makes a world of difference in how long it will take you to make something.
