I live in a heavy Asian area I'm surrounded by top rated Japanese Korean Thai and Chinese for Arizona. The one I started to go to I found out was my younger sisters friends 1st gen American Chinese family eats at. Just find anything on yelp thats 4.3+ stars and it cant be that bad.

I've only been to a few cities in China but my two favorite regional styles have been Shanghainese which is usually fairly sweet and sour type sauces with seafood and Cantonese from southern china with more roasted meats and dumplings.
That has been my experience anyway, a lot of Chinese food isn't confined to one region so everywhere has a bit of a mix of all their surrounding areas and when you're at Chinese restaurants in western countries it's even more common to see a lot of regional dishes on one menu.

The western half of the country we now know as China, wasn't considered China for a very long time. Culturally and historically it was closer to persian, indian/tibetan, and central asian cultures. While north western china was mongolian.
Those regions are very harsh climate and geography, making it difficult for powerful civilzations, and high population to exist, while the rest of china was able to establish agriculture and technology and stuff.

It was only with the One China policy in the last century where the country we now know as China (it's government, actually) started taking much more control over the different regions. In the past it was more thought of as the neighbors who pose an annoyance to the stability of the dynasty's power because of invasion or attacks, or maybe partners who we communicate with to trade with thru the Silk Road.

The parts of china that are very developed, and populated, have been going between different dynasties, sometimes different cultural and linguistic traditions, but they all turned out to create what we now think of as "China." Even parts of this historic China can be divided, as OP said, in different cultural and sometimes linguistic regions.

I once had a chinese roommate, from way in the north, close-ish to russia or korea. He once told me that when speaking he could only understand about 60% of people who live in China, because many of them speak such different dialects, or completely different languages all together. This evidence the great diversity that is contained in the nation of China, for better or worse, that most people aren't lead to think about.
