im glad this thread came along cause i have a question that dosent deserve its own thread:
if im making a pancetta or prosciutto can i just place the meat in a tub with iodized salt then cover it with more iodized salt or must i use non iodized salt ? i know i have to dry it out and hang it afterwards but my question is can i use iodized salt?
