A tincture is just an extraction from a plant made with alcohol. Imagine like tea or coffee but using alcohol instead of water. You can extrat THC since it is alcohol soluble. The stronger the alcohol the better it will work.

you could literally brew them, fruit juice and yeast, in the latter stages of brewing siphon it into the flask and cork it tightly, it should get very fizzy in the bottle

15 grams of sugar per liter is roughly equivalent to 1% alcohol content if 100% is converted, so if you keep it under 50 grams it should turn into wine/cider

use different color fruit juices and add food coloring, maybe coffee for energy potions

Anything really. A well known one (arguably not a tincture, but close enough) is creme de menthe. Upping the plant matter to alcohol ratio, and using 95% food grade ethanol, and heating rather than simply soaking, followed by a reduction in the liquid will result in a much thicker tincture, close to a syrup in consistency.

That's an oral method, yes. They can also be used in other ways for other things. Some tinctures are appled topically.

You want to use the highest concentration alchohol possible; it makes the extraction of many things more efficient. Take cannabis for example; THC is poorly soluble in water. Using vodka works, but poorly. Using, say, everclear instead is far more potent.

Keep in mind that many tinctures taste awful so the stronger you can make them the smaller amount of vile-tasting crap you have to put in your mouth.
