>being retarded has nothing to do with oil spitting.
Sure it does. Oil doesn't splatter on its own. Spattering requires you to make one, or both of the following fuckups:
-dropping food into hot oil from a height
-getting moisture into hot oil

So a non-retard would simply lower food into oil carefully to avoid splashing, and would pat wet foods dry before putting them into oil or a hot pan to prevent moisture-induced splatter.

Again, only when there is moisture present. You can have a deep fryer full of hot oil and there won't be anything spattering unless you put moist food in it.

sounds like you weren't careful about patting it dry before you breaded it.

>All right, genius, do you dessicate your eggs before you fry them?
Nope. But if they have a very runny white likely to cause issues then I will choose a different prep method than frying them.

I'll agree that sometimes there's not much you can do about it, but the overwhelming majority of the time splattering is direclty caused by the actions of a careless cook inadvertently getting water into the oil/pan.

Not using a high sided pot when inexperienced. If you're just starting out frying then you should only fill half the pot (so use a big pot if you need more oil). When you get more experienced you can do fried chicken in a fry pan using 1-1.5 inches of oil and just swirl the oil to baste the top.

Reminds me of that part in one of Anthony Bourdain's book where he got a job working in a shitty seafood restaurant as a kid and that his older coworkers with hairy arms and calloused hands would humiliate him when he burned his babby hands.
When he eventually went to culinary school, he had a professor who was cruel. He went from student to student to break them down. When he reached Anthony, the professor quickly realized that Anthony was already broken down, so he moved on.
The lesson is that in order to build someone up into something worthwhile, you have to break them down first.

Don't be a pussy. A little pain won't kill you. I get burns all the time from the potholder being a bit off or grease splattering but I still cook. I once even spilled a gallon of boiling water on my entire hand which took about a month to heal up.
