I don't know what maple bacon you're buying if it's overwhelmingly sweet. They cure bacon with actual sugar too, and that's not particularly sweet either. Maple bacon is primarily to impart the minerality of the maple syrup flavor.

True bacon (can't speak for the megacorporate chemically injected and tumbled pig slop) is typically cured with a salt rub which includes cane or brown sugar. Maple bacon replaces that curing sugar with crystalized maple syrup. The faint flavor of maple syrup is there, but it's no sweeter than the standard sugar cure.
