Ipa's that highlight hop flavor profiles benefit from being drank as fresh as possible. It's a very weird idea as the whole point of an ipa is to be stable for the journey but all of the memest of meme big giant American ipa's are ment to be drank as fresh as possible. A michigan brewer goes so far as to bottle it and deliver to the store on the same day for the once a year production of one of its better ipa's. It realy does degrade quite a bit once a week has gone by but is still stellar. Shelf rats are the cool shit the stoned guy at the liquor store ordered for himself then either forgot about or got fired before he could take it home. Either way you get some dusty wonders if they've been hiding in the right kind of environment.

that's probably the deconstructed bomb you're talking about. bomb is a high abv adjunct stout with coffee, chocolate, vanilla beans, and ancho and the 4 pack are each adjunct added one at a time in each bottle so you can taste the differences, kind of a neat concept. $36 ain't bad considering I see regular bomb go for $10 or so each. shit ain't cheap to produce.

The best example of water manipulation is adding gypsum to your wort because the increase in sulfates will cause the hop flavours to come out.

People add salts like magnesium sulfate, calcium chloride, etc to the water in order to adjust some of the pH (Depending on grains used), body, taste, yeast health, etc.

There's a lot of things that come into play when mashing beer that can be looked over. But obviously if you want to brew better beer, you need to look over all of that.
