I don't normally take pictures of what I cook, but here's what I've got on hand. I took it several years ago as it was the first time I made the dish, so the cuts aren't that great and the plating is unimpressive.

It's sliced yellowtail and oranges seasoned with salt, pepper, chopped garlic and chili peppers. While the dish normally uses gold smelt roe, I used green in this instance as a substitute for lack of gold. It's topped with some radish sprouts. The sauce at the bottom is ponzu I made, and there's a drop of orange oil on each slice of fish.

We have a young crowd, but a pretty wide mix of customers in general. We're a small venue and the people who come are generally open minded eaters. It's something I care about, as I believe it's a more sustainable way of eating. And I think the idea of delegating vegetable dishes to being purely vegetarian boring. It's seen good results for us, with the carrots being one of our best sellers.
