He is talented but he has very narrow horizons. I remember on an episode of one of his shows a restaurant he visited had a grilled wedge salad on the menu and he acted like it was something he had never heard of before and it was some weird moronic invention this restaurant had just come up with. I'm not defending grilled salads because I personally think they're fucking gross, but for he as a professional chef to have literally never heard of one is just absurd.

And my expectation isn't for him to be some sort of all star sushi chef, just to not even know the existence of what I consider a fairly common southwestern dish seems sloppy, especially considering the whole premise of the show is him visiting a variety of different restaurants and critiquing their practices and menu options.

As for your example of common southwestern dishes, I agree completely. But I also can't help but wonder if sometimes he's not acting for the camera. I remember one of his TV shows where he was bitching about shark fin soup. Ethical concerns are one thing, but he tasted it and was talking about how it didn't have much flavor. I would expect that a chef of his caliber would know that TEXURE is just as important in food, and that's the point of said soup. I refuse to belive that he wasn't aware of that and I think he conveniently didn't mention texture in order to avoid distractions from his ethical concerns. Or maybe that was another fuckup, I'm not sure.

Hell's Kitchen he's stated multiple times that nothing he says is personal during dinner service and that he simply needs to push people to their absolute limit to get the best out of them. All the other segments of the show he's a nice person.
