I did a year at a culinary school for fun and because I got the tuition waved, and in my Introduction to international cuisine course we spent an entire single day on all of Africa. The very first thing the instructor (whom Keller staged under back in the day) said was that there were only three countries in Africa that are recognized to have a significant cuisine: Morocco (best example of North African), Ethiopia, and South Africa. So if you disregard Muslim conquest and European colonialism, Ethiopian is the only African food worth a damn.

if you cant into african food, thats fine. its not very big in terms of looking appetizing and has a very straight forward approach in terms of flavor, leaving subtlety behind in favor of power. (which the natives are used to) but if its something you can get behind, it can be one of the most comforting foods.

I only had Ethiopian food. It's not pretty, but damn is it delicious. So much spice and strong flavor profile. I love the kitfo and the doro wat.

Lived in Uganda for 2 years (Peace Corps) and the food there was pretty simple but tasty. The roast pork, however, was God Tier.

I work with a Somali who gives me food that his wife made on a weekly basis and it's always super delicious. Samosas, stewed goat, marinated chicken, this weird but delicious potato salad, and this kind of sweet bread to name a few of thethings

Ethiopia is the only African country that didn't get colonised by the western powers. It kind of did the Japan thing, a strong empire retreating into isolation after coming into contact with the west, then undergoing rapid internal modernisation. Too bad they went full gommunism.

It's not surprising that they have notable cuisine, since the empire stayed together for so long, but I don't remember anything about it other than injera bread and a lot of stew-like dishes that reminded me of india/the middle east.
