I did a year at a culinary school for fun and because I got the tuition waved, and in my Introduction to international cuisine course we spent an entire single day on all of Africa. The very first thing the instructor (whom Keller staged under back in the day) said was that there were only three countries in Africa that are recognized to have a significant cuisine: Morocco (best example of North African), Ethiopia, and South Africa. So if you disregard Muslim conquest and European colonialism, Ethiopian is the only African food worth a damn.

Ethiopia is the only African country that didn't get colonised by the western powers. It kind of did the Japan thing, a strong empire retreating into isolation after coming into contact with the west, then undergoing rapid internal modernisation. Too bad they went full gommunism.
