I'm not vegan but you might like this dish my ex girlfriend taught me, she could live of this for days. It's like typical sauteed bok choi like you get in restaurants, but less oily.

Ingredients:
Bok choi
Silken Tofu
Granulated bouillon (the kind with msg, I think this can be vegan?)
Oil
Rice

Start cooking rice. While rice is cooking:

Boil a kettle of water. Chop ends off bok choi and chop into quarters. You may need to pull off the outer leaves and wash under them, if there is dirt there. Chop tofu into 1-2cm square pieces. Heat about 1 tbsp oil until very hot, and add bok choi. It will splatter so have as little water on the bok choi as possible when you do this. Cook for about 1-2 minutes while agitating. Then turn down heat, and add boiling water. Add tofu, chopped into peices, and bouillon (amount depends on how much water you add). This will result in a kind of soup. Serve with the rice.

For non-Canadians, note that while the tax of $2.55 may seem reasonable, it's actually very low as our value added tax is set to 15% here. It appears that way on the receipt thing, but if you go on the actual website you'll see it's otherwise. For one, peppers are on sale. See pic related for peppers. It appears that for the website they take the average weight of the given item, and then charge you for that based on the price by weight. The running price by weight for this sale is $1.85/0.24kg=$7.69/kg, but the regular price of $2.64/0.24kg=$11.13/kg.

Therefore in this neck of the woods, we usually pay $11.13 per kilo, so buying 8 peppers is a fairly expensive choice at the grocery store.

TL;DR that section of the receipt stating price per kilo is wrong.

I made the mistake of selecting a recipe where bell peppers were the primary ingredient once, but they're ridiculously expensive here so I haven't made that mistake since.
