The date is fine. You can cook eggs beyond that date for sure. Make sure they're well done, I guess. The issue is that if you've likely had them for a few weeks, is if they were part of the massive RECALL on that specific size eggs. Were they? I threw mine out and have stuck to jumbo which wasn't part of the recall.

Ya know what happens to out-of-date eggs on the vendor level? They get repackaged with fresh date. Eggs are good for MONTHS after tbeir sell-buy.

Just fill a bowl with cold water and place your eggs in the bowl. If they sink to the bottom and lay flat on their sides, they're very fresh. You can cook those bad boys however you want.

If they're a few weeks old but still good to eat, they'll stand on one end at the bottom of the bowl. No raw applications though, cook thoroughly. No soft boiling, sunny siding, poaching or mayos.

If they float off the bottom of the bowl they're rotting and gas is building inside, they're no longer fresh enough to eat, throw those fuckers out.
