there is a poorfag tuscan recipe called pappa al pomodoro, which is basically garlic soffritto + tomatoes sauce + stale tuscan bread (tuscan bread has no salt) and basil,pepper,salt,ecc.
simple but actually very tasty, also fast to cook

also there is a similar lombard recipe with cheese that my grandma used to make but insted of oil you use butter and a soft cheese like taleggio or stracchino
