i dont think ive ever seen a single filipino restaurant. not one. lived in denver, austin, olympia. not one. that says a lot about their food if nobody wants to eat it.

Flip food uses sour in practically everything, and unfortunately the ingredient availability outside the Philippines for things like fresh tamarind, or 900 kinds of artisanal vinegars from various tropical fruits, is severely lacking. So what they do is substitute Heinz vinegar and shit like that, and inevitably it tastes like ass.

I think most flips can even admit flip food isn't that good. After a certain price point flip restaurants in the Philippines itself become scarce. Y'know, if you're gonna pay good money, you don't buy flip food.

Because most Asian food sucks (or more accurately isn't appealing to western consumers). Really think about "Chinese" food and not much of it is authentic. You might at most find a dim sum place, but those are the exception to the rule. With Japan, you have sushi, ramen, katsu, and maybe a few others, but many of those are altered like cream cheese sushi. If filipinos actually worked on their cuisine and brought it up to standard maybe they'd be able to showcase it in restaurants since it has quite a few original flavor profiles and ingredients. Everybody should understand the history of the Philippines before the American intervention.

The Spanish/Mexican elites at that time preferred their own cuisine and localized Chinese cuisine (Hokkien + Hakka) in general. And it was the Chinese and half-Chinese cooks and bakers that brought Spanish and Mexican dishes and cooking methods to the native locals. You can see that there's no standardization by region or class structures in the national cuisine all in general.

And unadulterated American values suddenly swept the whole islands and pretty much brought Protestant style family values (AKA a high dose of pride by blood bond under one religion) that later brought "the age of home cooking and don't share our family recipes to other families".

Pretty much America's social policies under the administration shaped the whole cuisine.... mostly in a bad way.

There are alot of Filipino restaurants though, about as many as Korean restaurants in the US. In Europe it's less but gaining traction. From my experience, they all received fairly good reviews by whites, only complaints are sometimes long waiting times but the food itself is well received by them. The only ones giving bad reviews are some Filipinos themselves and for some reason sandniggers.

Christian Indonesian-Canadian here. I can eat any meat unlike my Muslim relatives. To be fair, most of the the Philippines and East Timor are the places that continue the legacy of the pre-Islamic Malay world. That is, both places may be settled by colonial forces from Portugal and Spain, but they did not harm the fundamental elements of their original pre-Islamic cuisines (heavy use of vinegar based from grain*, citrus, and typical SEA herbs as in fragrant leaves and flowers) and hefty influence from the Americas (extra heavier use of chili pepper than my Sumatran home city). To be frank, my personal experience with East Timorese cuisine is generally similar to the cuisine in our northern neighbours. Very similar cooking methods but with very different ingredients that could confuse the locals of the two countries respectively. I think it's because the colonizers did not have much problem with the food preparation methods by the natives.

This is just from my Indonesian-colored perspective. You can disagree with me.

* Muslims still abhor vinegar as it is from booze, but they would make an exception depending on local cultures for booze or vinegar made from palm sap as the Islamic traditions dictate no booze "from fruits or grains".

Because the Filipino diaspora has always been smaller than that of the Chinese or Japanese in America so it never really managed to have its cuisine breach the mainstream.

You should honestly be a bit thankful, Flip places are rare as gold dust but whenever you see one you're at least guarenteed authentic recipes or attempts to recreate them with local ingredients - Chinese and Japanese places barely serve any shit from their respective home countries in the west and at best use a handful of native ingredients, unless you go to higher end places.

American Filipino people seem to try to be as white as possible. Regardless of where I've met one all of the women talk with a valley girl accent. To make it more bizarre despite all of that they still mostly hang out with each other. I was friends with about 30 Filipinos and they all hung out at like fucking Applebee's or Dennys and drank Budweiser and Southern Comfort despite being in a city with 500000000 restaurants and 10000 breweries. Like they were living a caricature of a white american life. I've never seen a group of people consume so much McDonalds and Axe body spray.

Speak for yourself. Lumpia, pansit, and most of all adobo are good and beef inihaw is amazing (albeit salty). BUT - people make it all different ways. Everyone loves my mom’s adobo but some make theirs sweet and I have tried one person who made terrible adobo. That said, none of the Filipino food that my mom makes is sweet. We also don’t eat spaghetti with ketchup but her lumpia are definitely atypical and not authentic style (but screw it - everybody loves them).

Philippines happens to be the country that has a bizzare mix of best and worst. Probably the second ugliest asian woman I've ever seen my entire life was a flip(ugliest was some mail order vietnamese, both literally look like an homo erectus) but the hottest asian I've ever seen happens to be a flip too. One of the ugliest towns, ergo a slum, I've seen was in Manila, but the comfiest town I've experienced around the world was some provincial town in Masbate. Their President has both far left and far right opinions. And the same applies to the food. Some of the people living there are extremely savage but the majority is very friendly.
