Because filipino's have a shit tier food culture and a shit tier palate. Sure they might gorge you with food every time you visit but the vast majority of people cooking have no sense of refinement, use shit tier ingredients and cater the taste to sugar addicted diabetics who also love fat/salt bombs and everything drenched in vinegar so that you don't choke on the fat. At least indochina was colonized by the french and refined their food a bit, and they actually had royal courts which inevitably develops better dishes than cultures without them. Food is seen as a filler and caters to basic tastes, same thing for filipino art really no sense of rigorousness or refinement.

The best of flip cuisine can only be found in the countryside since fresh exotic/tropical ingredients are hard to find in mainstream produce logistics and you have to find someone who can actually cook it decently.
Chicken braised in fresh coconut milk and wild lemongrass/galangal inside a big bamboo shoot on top of a fire was amazing, reef fish kilaw with exotic sour fruits, fresh crab roe fried rice, a shit ton of artisanal vinegars, black glutinous rice desserts, a selection of fermented anchovies by week...

If filipinos actually worked on their cuisine and brought it up to standard maybe they'd be able to showcase it in restaurants since it has quite a few original flavor profiles and ingredients. But right now they can just wallow in poverty with their mass produced vinegar, shit tier palates that kill them of diabetes/heart attack and lack of rigour in cooking.

Everybody should understand the history of the Philippines before the American intervention.

The Spanish/Mexican elites at that time preferred their own cuisine and localized Chinese cuisine (Hokkien + Hakka) in general. And it was the Chinese and half-Chinese cooks and bakers that brought Spanish and Mexican dishes and cooking methods to the native locals. You can see that there's no standardization by region or class structures in the national cuisine all in general.

And unadulterated American values suddenly swept the whole islands and pretty much brought Protestant style family values (AKA a high dose of pride by blood bond under one religion) that later brought "the age of home cooking and don't share our family recipes to other families".

Pretty much America's social policies under the administration shaped the whole cuisine.... mostly in a bad way.

Here in Winnipeg, Manitoba (Canada), the legit reason we have almost no Filipino restaurants is literally because the FDA stated that the amount of cholesterol in each dish is unreasonably high.

Christian Indonesian-Canadian here. I can eat any meat unlike my Muslim relatives. To be fair, most of the the Philippines and East Timor are the places that continue the legacy of the pre-Islamic Malay world. That is, both places may be settled by colonial forces from Portugal and Spain, but they did not harm the fundamental elements of their original pre-Islamic cuisines (heavy use of vinegar based from grain*, citrus, and typical SEA herbs as in fragrant leaves and flowers) and hefty influence from the Americas (extra heavier use of chili pepper than my Sumatran home city). To be frank, my personal experience with East Timorese cuisine is generally similar to the cuisine in our northern neighbours. Very similar cooking methods but with very different ingredients that could confuse the locals of the two countries respectively. I think it's because the colonizers did not have much problem with the food preparation methods by the natives.

I think Chinese cuisine is more elaborate in total and since the country is culturally and historically more relevant it's not surprising the food is more popular than Flip food. I don't know shit about Pinoys to be honest.

i grew up in hawaii so legit flip food was easy to come by, where as i assume most haoles just get the generic shit. it's really not that bad as a whole, but isnt as unique as other SEA cuisine
