As near as I can tell the only real difference between dairy is what kind of cow is used. Jersey milk is considerably better than normal.

Absoloutely yes. The diet of an animal has a massive impact on its taste.

That said, there are a lot of companies who exploit the laws regarding labeling of things like "pasture" and "grass fed", "cage free" and so on. Many of the products might legally qualify to be sold under a certain label but aren't much different from the standard. For example, I've bought eggs from Vital Farms--same brand as OP pic. They were labeled "cage free" but were hardly any different than normal eggs. The package also stated "vegetarian fed", so I assume the hens get the same industrial feed as battery hens. OTOH, the eggs I get from my neighbor--who has ~15 chickens on a whopping 11 acres--taste completely different.

tl;dr: yes, it matters. But beware of products that exploit legal loopholes to fake it.

Yeah the cage free especially... to qualify as cage free they just have to not be technically locked in a cage, and have access to go outside. Thing is most chickens will not leave their nest when roosting so they never leave. As for the vegetarian feed... also correct.. that means they are feeding them the grains like every other industrial farm, instead of letting them run wild and eat the worms and insects they were designed to live on.
