I’m not sure to what extent there really is a difference or if a difference was simply parsed out to justify using a new word. If you look up recipes for “gelato” they look suspiciously like ice cream. Or even “frozen custard” as most include eggs. With most home ice cream makers not able to achieve the rpm needed to whip a lot of air into the mix. Everyone is essentially making “gelato” already and were doing so before it was hip.
