About $2 in Vietnam. Meat in Vietnam is expensive considering how poor they are.
The Pho broth is the key, and restaurants/street vendors will always get the flavours cooking together the night before.
Having said that, I'll take a good ramen restaurant in Japan over a good pho restaurant in Vietnam any day.

Most asian grocery stores (and all H marts, if ur on the east coast) carry 'shabu shabu meat' which is essentially super thin cut meat that's for shabu shabu. You can do the same by adding the meat to your ramen right before serving.

I think the broth was one of those 'perpetual stew' style mixes (the spice bag is used over an over again until they add new spices after it starte getting week, and the broth is kept chilled or frozen if need be).

This. Sushi was essentially the equivalent of deli's in Japan, and yeah, there's a great deal of pride in the artistry and stuff, but that goes for pretty much any food with history.

For the same reason someone could justify paying $70+ for a burger, or talk about the proper dough technique that makes an equally expensive pizza great, people claim the same shit about how a true sushi master must spend years before they even learn how to handle the fish.

Yeah, there's a noticeable difference in quality but you honestly can have decent sushi without having to pay an insane amount of money, for the same reason you can have a decent burger or pizza without walletrape.

'bout a decade and a half. Got to visit/eat at most parts of the continental US, from the north east to the south to the midwest and west coast. Like 5 years ago "getting pho" meant going to the tiny Vietnamese shack of a restaurant and ordering a massive bowl of hot food for like $7. It's tasty and unique enough to be something you can crave. High end pho is moronic, some places near me now try to charge $15 for a bowl of mediocre soup.

Protip- if the restaurant doesn't have plum sauce and chili sauce on the table, then it's not worth your money. It's very easy to make too, I like pho a lot and can't even remember the last time I actually bought it prepared.

I worked at a gook/american/nightclub on weekends weird ass fucking place for a couple years.
Pho is great when it's done right. But it's not $20 a bowl good. At my place they would roasted the bones, build the broth from scratch and use rare ribeye. It was awesome.
But I've gone to places since then where it's very obviously beef broth paste.
For double the cost of a single bowl at a restaurant you can just make a butt load at home and impress your hipster friends.
