mix eggs, parmesan and black pepper
fry pancetta, no oil because enough fat
when pasta is done and still hot i put pancetta then mix and then i add the eggs then mix again. if pasta is not hot enough i warm a bit more ( very low flame) and continue mixing until I have a creamy like sauce.
I don't use guanciale because it gets too greasy when it colds, it makes me throw up
