Bear was actually a common food out west before the USDA and FDA put a ban on wild game being sold commercially. Like the other anons have said how it tastes depends solely on what it has eaten the day of and before you have killed and cleaned it. If it ate fish and you eat it, it will taste like fish on hot day after sitting out. But if you manage to get it after eating berries you're in for a treat. Bears are actually omnivores and kill rarely so they mostly scavenge off of plants. So if you want to be a man and go kill a bear go and do IT and cook yourself a tasty treat. Pro tip the backstrap is what you're going to want the rest is stew meat

I lived in an area where bears were common. One day I found a gigantic orange pile of bear barf in my yard. Turned out it had eaten all the berries off some bush that was not edible. Apparently they do that every year because they're too dumb to figure out what bushes they can eat.
