This is the best video for learning two kinds of omelettes. Like he says, one isn't necessarily better than the other, they're just different. I prefer the second kind stuffed with onion, mushroom, broccoli, and cheddar.

Gave this a shot. Fucked it up by adding too much stuff and the egg seemed to burn the second it hit the pan, but honestly it came out pretty tasty.

Yeah he says it's over high heat which is what you want so it doesn't lose heat after you put the egg in, but you can see the butter doesn't start burning right away so you want to put the egg in before the pan is fully heated. Don't worry about messing it up a few times though, eggs are tricky to make perfectly. It's why some people ask someone to make an omelette when they want to judge their cooking skill.

It's possibly an anodized aluminum pan which is more scratch resistant, but yeah don't do that in a nonstick pan if that's what you have, use a utensil that won't scratch in that case.
