I live in Amsterdam so it'd basically be impossible to have one, but if you did, you could only make a profit with:
- incredibly basic cheap fast-food style stuff but then you're surrounded by almost poor people and drunks
- anything that sounds Mediterranean
- incredibly hipster fusion bullshit
I'd go for the third option, seems that's what makes the most cash at food truck events
