Most cheap beef is fairly neutral to me, raw it's almost like biting the inside of your own cheek. Fattier, aged beef has a stronger savoury flavour, I could imagine trying to replicate it by cooking a mix of earthy vegetables down really hard in lots of butter. This'll sound weird, but there's also a tiny hint of "farm smell", or manure basically, depending on what the cow ate and how old it is.

Pork is similar in that lean stuff is milder than the rest, but it has more of a baseline taste of something like fried mushrooms. The fat and skin are the best parts, like intensified butter.
