I quit drinking and I'm looking for something labor intensive to cook to fill up my day tomorrow. I'm down with anything with lots of knife work etc. I have most spices and kitchen utensils. I live in a decent sized city and have access to most ingredients.

sounds good, i'll look into that. I've had it a few different ways. One of my favorites was where they put a layer of proscuitto in place of the duxelle. I always fuck up bernaise so that would be a good challenge.

Why not do something like make sauces, preserves, pickles etc? Lots of sterilizing, chopping, mixing, flavoring etc, plus what you make will last quite a while.
