They probably ate the beans raw first. People have been trying to ferment everything since they discovered alcohol. So then you get fermented beams (less bitter). Then you get trade, so you want to allow them to be preserved better ... so you roast them. Then you grind them up with some sugar and you have chocolate.

If you want to really have your mind blown, go watch an episode of How Its Made. While they're showing you how something is made, take the time to think about each and every single machine that is used in the process of making an item. All the effort that went into making those machines. The placement of every nut and screw. The shaping of metal into sheets, the refining of plastics. The mining of ores. Entire lives, born and lived, for the purpose of making maybe a few small decisions that went into this giant process of making these machines which can make this singular item.

Industrialised civilization is mind-boggling in its scope and complexity.

It's not it's part of the list there. chocolate bars as you know it were just a form of common candy that was made to use the cocoa powder.
Once the first batch was made, they revised teh recipe every year bit by bit to cut costs and adapt to undustrial standard. It's not magic it's just controlled little changes. Things ferment naturally when put into bottles. And picky eating was death. If the fermentation tasted good then people quickly understood the basics and replicated it. Usually lots of trial and errors but once you got it, it doesn't matter you wasted a few hundred pots.

I remember a while back some food blogger ran a contest to make a BLT "from scratch". The winner did all this crazy shit like drying seawater to make salt, growing his own lettuce and tomatoes, raising chickens for eggs for the mayo, chopping down trees for wood to smoke his bacon, creating his own yeast culture for the bread, etc. But in the end he still just bought a pork belly instead of raising a pig, and bought oil and lemons for his homemade mayo and bought wheat berries for his flour, etc. All these things we take for granted are really only possible because of how interconnected the world has become.
