Well say you leave out a package of mince until it’s fully thawed. The meat on the outside will be on the counter, unthawed at room temperature for a long time before the center is finished.
Same with the thinner ends of a tenderloin.
I mean it’s still very rare that this will actually lead to illness, but if you want to be completely safe or are cooking for babies or the elderly or AIDS patients, it’s best to put it in the fridge the evening before use.

I have some obsessive tendencies, so there are a few things I do by compulsion that aren't good and have made me sick

>Use 2 chopping boards, one for the first half of the alphabet and one for the second, without washing, so if I slice some chicken breast and some broccoli I use the same board, and have had e-coli once because of it

I've never really told anyone nor really accepted my actions but when I go to work on the third shift at taco bell, I would spit in some of the tacos if a car orders more than 10 tacos at a time. I think something is leaking into our water pipes but I'm too lazy to fix it. Everything cleaned in the sink now has a sort of film on it. meat doesn't normally go bad that quickly. if bacteria from the environment haven't gotten to the meat yet it will go bad a lot slower. the biggest source of e-coli, salmonella, staph, etc. all that good stuff is you though, since they live in your body, so once you touch the meat it's been compromised.
