Get a rotisserie chicken, a block of monterey jack cheese, small corn tortillas, a jar of green salsa (salsa verde), and chicken boullion cubes.

Dissolve 4 chicken bouillion cubes in 2 cups of boiling water.
Shred chicken into a mixing bowl. Grate about 2/3 of cheese into bowl. Reserve 1/3 of cheese to top finished enchiladas.

Mix cheese and chicken, add 1/4 cup bouillion and 1/4 cup salsa. Mix.

Fry tortillas on both sides in lightly oiled pan until pliable, just a few seconds on each side, then dip them in a mixture of 2 parts salsa to one part chicken boullion.

Fill tortillas with chicken and cheese mixture, as they come out of the pan/ salsa dip, roll, and place seam-side down in a rectangular baking pan, preferably glass, with 2" high sides.

Once the pan is full, pour remaining salsa bouillion mixture over enchiladas just enough to coat and cover bottom of pan. More and enchiladas will be soggy, less and they will be dry.

Sprinkle remaining grated cheese over enchiladas and bake at 350/375 for 20-30 mins. Everything is already cooked, so you're just heating it up. Take out when most of the pan liquid has absorbed into the enchiladas.

Baking feels like I'm making a casserole. The way my family has traditionally served them is just fried tortillas layered on top of each other, with spoonfuls of sauce and layers of cheese between. Ive heard this is a regional way of serving them, but also been told its a lazy way. Regardless, I prefer it to the standard roll and bake. Its messy, but delicious, especially with a fried egg on top.

simmer the chicken chunks in a water and chicken boullion mix for a while. lets the chickeny taste penetrate them. then do your baking when theyre all put together.
