Personal preference, I suppose. But I find it's more enjoyable to use blue cheese on saucy wings, because your primary concern is getting the chunks onto the wing. Not so much the runny part of the dressing. If it's a saucy wing, it doesn't need more sauce. Just the chunk of cheese is nice.

Ranch can grab a dry wing better because it lacks chunks you need to "scoop", and that's the point. The dry wings need a coat of something.

Drums are worse because the balance of fat to meat is off. Flats are perfectly balanced, so they're deliciously moist each time. This is the most popular opinion too as in many countries around the world flats are 2-3x more expensive than drums which are sold separately.
